Pumpkin Muffins
10-20 muffins

Cream together sugar, butter, and eggs. Add squash or pumpkin and vinilla. Add to butter mixture; flour, salt, baking powder, and spices. (If desired topping; 1/2 tsp. cinnamon, 3 tbsp brown sugar, 1/2 cup pecans, sprinkle over the top or just top with powder sugar). Also good plain. Place in greased pre-heated oven at 350. Bundt pan 45 min or mini-muffin tin 18 min.
