Peach Salsa

 


1 ½ cups chopped peeled peaches

¾ cup chopped red bell pepper

¾ cup seeded chopped cucumber

¼ cup sliced green onion

2 jalapeno peppers, seeded and finely chopped

2 tablespoons honey

2 tablespoons lime juice

1 tablespoon chopped fresh cilantro

 

Combine all ingredients.  Cover and chill.  Good served over low-fat cream cheese with whole-grain crackers.  Refrigerate leftovers within 2 hours.
